Pictures usually say more than a thousand words. I think this picture actually speaks for itself. These fluffy pancakes do not contain any wheat flour, are quick to prepare and simply taste heavenly!
INGREDIENTS (for 1 serving:
- 1 cup (100g) spelled flour
- 1 teaspoon Baking powder
- 1 tsp apple cider vinegar
- 1 cup (240 ml) plant-based milk
- 2 tbsp coconut oil
- 1 apple
- 2 tbsp water
- 1 tsp cinnamon
- 1 tsp coconut blossom sugar
- 3 tbsp soy yoghurt
- 1 square Moruga Cacao, roughly chopped
PREPARATION:
- Mix the spelled flour, baking powder and apple cider vinegar in a bowl.
- Gently fold in the plant milk. Let everything simmer.
- Meanwhile, cut the apple into small pieces and place in a pan with the water. Cook until the apples are soft.
- Add cinnamon and coconut blossom sugar and stir until evenly distributed. Cover and cook again, stirring occasionally, until the apple pieces caramelize and are lightly browned.
- Melt the coconut oil in a pan and add the pancake batter in batches.
- Fry the pancakes until golden brown.
- Serve on a plate, garnish with soy yoghurt, apple pieces and Moruga cocoa.
- Best enjoyed straight away!
