Moruga spelled pancakes with sautéed apple

Moruga cocoa spelled pancakes
Pictures usually say more than a thousand words. I think this picture actually speaks for itself. These fluffy pancakes do not contain any wheat flour, are quick to prepare and simply taste heavenly!

INGREDIENTS (for 1 serving:

  • 1 cup (100g) spelled flour
  • 1 teaspoon Baking powder
  • 1 tsp apple cider vinegar
  • 1 cup (240 ml) plant-based milk
  • 2 tbsp coconut oil
  • 1 apple
  • 2 tbsp water
  • 1 tsp cinnamon
  • 1 tsp coconut blossom sugar
  • 3 tbsp soy yoghurt
  • 1 square Moruga Cacao, roughly chopped

PREPARATION:

      1. Mix the spelled flour, baking powder and apple cider vinegar in a bowl.
      2. Gently fold in the plant milk. Let everything simmer.
      3. Meanwhile, cut the apple into small pieces and place in a pan with the water. Cook until the apples are soft.
      4. Add cinnamon and coconut blossom sugar and stir until evenly distributed. Cover and cook again, stirring occasionally, until the apple pieces caramelize and are lightly browned.
      5. Melt the coconut oil in a pan and add the pancake batter in batches.
      6. Fry the pancakes until golden brown.
      7. Serve on a plate, garnish with soy yoghurt, apple pieces and Moruga cocoa.
      8. Best enjoyed straight away!
