Vegan spelt pancakes with apple and Moruga Cacao

These vegan spelt pancakes are quick to make, use no wheat flour and are served with sauteed apple, soy yogurt and chopped Moruga 100% cacao. The cacao does not act like sweet chocolate sprinkles here; it adds an intense, slightly bitter topping with real cacao aroma.

Ingredients for 1 serving

  • 1 cup (100 g) spelt flour
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar
  • 1 cup (240 ml) plant milk
  • 2 tbsp coconut oil
  • 1 apple
  • 2 tbsp water
  • 1 tsp cinnamon
  • 1 tsp coconut blossom sugar
  • 3 tbsp soy yogurt
  • 5-6 Drops or 1 square Moruga Cacao, roughly chopped

Preparation

  1. Mix the spelt flour, baking powder and apple cider vinegar in a bowl.
  2. Carefully fold in the plant milk and let the batter rest briefly.
  3. Meanwhile, cut the apple into small pieces and add it to a pan with the water.
  4. Cook the apple pieces until they soften.
  5. Add cinnamon and coconut blossom sugar and stir until evenly combined.
  6. Continue cooking until the apple pieces lightly caramelize.
  7. Melt coconut oil in a second pan and add the pancake batter in portions.
  8. Fry the pancakes on both sides until golden brown.
  9. Serve with soy yogurt, apple pieces and chopped Moruga Cacao.

Why use 100% cacao as a topping?

Chopped Moruga Cacao adds bitterness, fat and aroma to the pancakes. Together with caramelized apple and cinnamon, the contrast works beautifully: sweet, warm, nutty and intense. If you normally use cocoa powder or classic chocolate chips, the comparison is worth it.

Tips

  • For a creamier topping, let the chopped cacao melt briefly on the warm pancakes.
  • If you prefer less sweetness, skip the coconut blossom sugar and use only apple and cinnamon.
  • For a stronger cacao note, drizzle a little melted Moruga Cacao over the pancakes.

    Das Rezept mit den Dinkel-Pancakes klingt fantastisch. In diesem und anderen Rezepten ist 1 Quadrat Moruga Cacao angegeben. Wieviel runde Schokoplättchen sind damit gemeint?
