
This vegan chia parfait works as breakfast, dessert or a prepared snack from the fridge. Chia seeds, coconut yogurt, raspberries and melted Moruga 100% cacao create layers that are fruity, creamy, gently bitter and cacao-rich.
The difference to cocoa powder is texture: Moruga Cacao still contains its natural cacao butter. When you melt it, it can set into a thin aromatic cacao layer that breaks into the yogurt and berries.
Ingredients
For the parfait
- 2 tbsp chia seeds
- 6 tbsp almond or oat milk
- 1 tbsp finely grated or chopped Moruga Cacao
- 1 cup (240 g) coconut yogurt
- 1 tbsp coconut oil
- 6-12 Drops or 2 squares Moruga Cacao
For the raspberry chia layer
- 1 cup (250 g) frozen or fresh raspberries
- 1 tbsp chia seeds
- 3 tbsp water
- 0.5 tbsp lime juice
- 1 tbsp agave syrup, optional
Preparation
- Mix chia seeds, plant milk and finely grated cacao in a bowl.
- Let it sit for about 10 minutes until it becomes pudding-like.
- Slowly melt Moruga Cacao and coconut oil in a water bath.
- Warm the raspberries with water in a saucepan and mash them with a spoon.
- Stir in chia seeds, lime juice and optional agave syrup.
- Layer the cacao chia pudding in a glass, then add coconut yogurt.
- Pour the melted cacao over the yogurt and let it cool briefly.
- Finish with the remaining yogurt and raspberry chia layer.

Why 100% cacao fits this recipe
The parfait already has freshness from raspberries and creaminess from coconut yogurt. Melted 100% cacao adds bitterness, depth and a firmer texture, so the recipe tastes less sweet than classic chocolate desserts but more aromatic.

Tips
- The raspberry chia layer can be prepared ahead and kept in the fridge for up to one week.
- Leave out the agave syrup if you prefer a less sweet parfait.
